Who Am I and Why Should You Follow Me?

I'm just a regular girl on the lifelong journey of battling weight and trying to live a healthier lifestyle. I'm a wife, a mom and the girl next door. My weakness... FOOD! I love it... it doesn't love me, so here begins the trouble. People that have a healthy relationship with food have an internal register to know when enough is enough. Me, well I'm missing that register, so I'm learning and trying and learning and trying. I guess you could say that when it comes to this subject, I'm a bit of a "slow learner". I am a lifetime follower of the Weight Watchers program... I've just never made Lifetime! For the last 5 yrs. I've ran the website Halfmysize.com. I've published a cookbook. I've lost weight. I've gained weight. Ohhh yes, I know what works and what doesn't... in theory. I just have to learn to apply that theory to my own life, which is the part where you come in. You see, you don't need me to tell you new ideas, recipes, etc. about how to lose weight. You can find that information in lots of places. The truth is, I need YOU for support in my lifelong battle. I will NOT give up! I hope you'll join me on my journey and help encourage me to reach my destination.

Tender Sugar Cookies


Serves - 60
Weight Watchers Pts. - 1

Ingredients:
1 cup light margarine, softened
1 1/4 cups sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour

Directions:

Beat margarine in a large mixing bowl with an electric mixer for 30 seconds. Add 1 cup of sugar, the baking powder and salt. Beat until combined. Add egg and vanilla until combined. Beat in as much of the flour as possible. Stir in any remaining flour. Cover and refrigerate for 1 hour.

Preheat oven to 300 degrees. Shape dough into 1" balls. Roll balls in remaining 1/4 cup of sugar. Place 2" apart on ungreased cookie sheets.

Bake for 15 minutes or until tops are slightly crackled and sides are set. Do not brown. Remove cookies from oven and transfer to a wire rack to cool.

NOTE: For a festive look, roll dough in colored sugars instead of granulated sugar.

Yields: 5 dozen cookies
